Tonight my sisters and I made this vegetarian lasagna and it was heaven, and super easy to make so I thought I'd share it with you all :-)

First dice and slice some zucchini, eggplant, and carrots |

And not to forget some yummy garlic |

Then cook all the veggies (cook the eggplant slices in a separate pan) + garlic + some butter and add some tomato sauce after a few minutes
(don't forget to boil the carrots before adding them in the pan) |

While the tomato/veggie mixture is sizzling, whip together some cheese sauce |

Layer everything into a big dish... a layer tomato mix, some lasagna pasta, some cheese sauce and not to forget the slices of eggplant and so on until the dish is full |

Put some grated cheese to top it off and then slide it in the oven for 25 minutes (180°c) |

And voila! |
